Authentic Pizza

Just how popular pizza is? There are over 3 billion pizzas purchased in the United States every year with another 2 billion being purchased around the world and still another 1 billion frozen pizzas being sold each year.

Authentic Neapolitan pizzas are made with local ingredients like San Marzano tomatoes, which grow on the volcanic plains to the south of Mount Vesuvius and Mozzarella di Bufala Campana, made with the milk from water buffalo raised in the marshlands of Campania and Lazio in a semi-wild state. According to the rules proposed by the Associazione vera pizza napoletana, the genuine Neapolitan pizza dough consists of Italian wheat flour, natural Neapolitan yeast or brewer’s yeast, salt and water. For proper results, strong flour with high protein content (as used for bread making rather than cakes) must be used. The dough must be kneaded by hand or with a low speed mixer. After the rising process, the dough must be formed by hand without the help of a rolling pin or other mechanical device and may be no more than 3 mm thick. The pizza must be baked for 60-90 seconds in a 485 °C (905 °F) stone oven with an oak wood fire. When cooked, it should be crispy, fragrant and tender. Neapolitan pizza has been given the status of a “guaranteed traditional specialty” in Italy.

This allows only three official variants:
1. Pizza marinara, which is made with tomato, garlic, oregano and extra virgin olive oil (although most Neapolitan pizzerias also add basil to the marinara);
2. Pizza Margherita, made with tomato, sliced mozzarella, basil and extra virgin olive oil and
3. Pizza Margherita extra made with tomato, buffalo mozzarella from Campania in fillets, basil and extra virgin olive oil.

Pizza in Lazio (Rome), as well as in many other parts of Italy is available in two different styles:
Pizza rustica or pizza al taglio… This pizza is cooked in long, rectangular baking pans and relatively thick (1-2 cm). The crust is similar to that of an English muffin. It is usually cut with scissors or a knife and sold by weight.

In pizza restaurants (pizzerias), pizza is served in a dish in its traditional round shape. It has a thin, crisp base quite different to the thicker and softer Neapolitan style base. It is usually cooked in a wood-fired oven, giving the pizza its unique flavor and texture. In Rome, a pizza napoletana is topped with tomato, mozzarella, anchovies and oil (thus, what in Naples is called pizza romana, in Rome is called pizza napoletana).

Other types of Lazio style pizza include:

– Pizza capricciosa (”capricious pizza”): mozzarella, tomato, mushrooms, artichokes, cooked ham, olives, oil (in Rome, prosciutto raw ham is used and half a hard-boiled egg is added);
– Pizza romana (in Naples): tomato, mozzarella, anchovies, oregano, oil;
– Pizza viennese: tomato, mozzarella, German sausage, oregano, oil;
– Pizza quattro formaggi (”four cheese pizza”): tomatoes, mozzarella, stracchino, fontina, gorgonzola (sometimes ricotta can be swapped for one of the last three);
– Pizza quattro stagioni (”four seasons pizza”): same ingredients for the capricciosa, but ingredients not mixed.

Sicilian-style pizza has its toppings baked directly into the crust. An authentic recipe uses neither cheese nor anchovies. “Sicilian” pizza in the United States is typically a different variety of product made with a thick crust characterized by a rectangular shape and topped with tomato sauce and cheese (and optional toppings). Pizza Hut’s “Sicilian Pizza”, introduced in 1994, is not an authentic example of the style as only garlic, basil, and oregano are mixed into the crust.

White pizza (pizza bianca) uses no tomato sauce, often substituting pesto or dairy products such as sour cream. Most commonly, especially on the east coast of the United States, the toppings consist only of mozzarella and ricotta cheese drizzled with olive oil and spices like fresh basil and garlic. In Rome, the term pizza bianca refers to a type of bread topped with olive oil, salt and, occasionally, rosemary leaves. It’s also a Roman style to top the white pizza with figs, the result called pizza e fichi (pizza with figs).

Ripieno or calzone is a pizza in the form of a half moon, sometimes filled with ricotta, salami and mozzarella; it can be either fried or oven baked.

Now you have to make a tough decision… With so many appetizing types of pizza is really difficult to choose one.

Overweight or not, emotional eating is a common yet often times not realized cause of weight problem. Have you ever eaten because of any other reason but hunger? When your stomach did not ruble, grumble or pang but you still feel that dramatic push as a “must eat NOW!” that is the emotional hunger pushing, not the physical hunger.

When you think about it, with all these diets all around, with all these healthy eating plans, it is alarming that the statistics show more and more people suffering due to their overweight. We should all be getting better and better, not going from bad to worse. Unfortunately the cruel reality shows that we are fighting a powerful enemy…not just a plate of food.

Every time when you felt that urge to eat, that sudden “must” to get a bite of that “forbidden food” comes and hits so strongly that we indulge another and another bite. Even when full, the emotional eating will not stop, forcing in another bite and then another until feeling guilty.

Let’s see more characteristics of the emotional eating.

It comes all of a sudden, installing itself regardless of the fact that you might have just eaten, demanding immediate satisfaction. Emotional eating hunger is unaware of how much food is being eaten and also it doesn’t really matter what is being eaten what’s more…the eagerness to eat more doesn’t stop even after you’re full. Oftentimes it only is satisfied with certain cravings, usually your favorite indulgence. The guilt that follows makes the person cover it in promises of doing better the next time.

However, facing it, it is obvious that emotional food hunger is generated by an emotional and not a physical issue. The real “generators”, or factors that lead to this condition are such as: a relation break up, a partner cheating, losing one’s job, someone close getting sick etc.

Many times it is the response to rejection. People simply do not feel loved and appreciated for what they are; they are in a continuous competition and battle to achieve best on their profession, looks and relationships, yet the greatest mistake is when they compare themselves to others thus setting goals hard to achieve, unrealistic and severe. The stress levels accumulate leading the person to a response of some sort. Often times, chocolate comes in handy, one more tomorrow as it made me feel good today, and if you feel rejected by your partner, community or at work, you will unconsciously try to make up for it somehow.

A piece of something sweet (or anything to eat really) might seem good for the moment but it becomes something usual, then a habit and afterward, it is installed to stay there in your daily routine as something you couldn’t do without because it gives a good feeling while you eat…as after eating…guilt comes and here we go again to the next time.

Counting calories doesn’t help either…so what can be done?

You need to go deep, deeper than your stomach because emotional eating hunger has its origins in the brain, if not even deeper than that, in your soul. Yes, I mean your heart and soul because it is there where you feel the pain of rejection, you might have felt it since the day you were born and I think we all are familiar with that to a certain degree.

The thing is to start searching your soul, your heart. What are you really trying to cover with that food? Is it frustration, is it anxiety and fear of different things situations or people, is it rejection? No amount of food will ever sooth the pain in your soul, the fear of being alone tomorrow or the lack of love you crave for. But, there is a Real Help: all your soul needs and will ever need within One Person, not in a theory or diet or set of rules and regulations. One person understands what’s going on in your life 100%, He knows better than yourself what you’re going trough and has no cheap surrogates for your problem. Yes, you might have guessed, I am talking about God, about Jesus Christ His Son.

Nothing else will work better because Jesus Knows what you’ve been trough, Jesus is willing to help you whenever you ask for His help. If you knew what I just told you was the truth, would you be willing to ask God for help?

You know, it is true, if you don’t believe it is not because it has not been proven, it is simply because you have not known about Him or perhaps you have not yet carefully examined the proof of history, science and experience concerning Jesus Christ.

What God wants you to know is that He knows about your struggle, He knows all your frustration and He loves you so much that even the hairs on your head are numbered! He knows you to the greatest detail and in His love, He sent Jesus Christ to prove His love towards you. Jesus Christ died on the cross for us to have eternal life, not just a struggle here on earth. God has a great plan for your life even if you don’t know it yet!

However, you will know His plan if you come to Him and ask! The first step is to come in His family, as He wants to make you His child, to make you a completely new person in Christ. Once you are His, and you renew your mind believing what God says you are in Christ, you have that inner need for love and acceptance covered, fulfilled and satisfied; thus your heart and soul get the healing they need.

“Therefore Jesus said again, “I tell you the truth, I am the gate for the sheep. All who ever came before me were thieves and robbers, but the sheep did not listen to them. I am the gate; whoever enters through me will be saved. He will come in and go out, and find pasture. The thief comes only to steal and kill and destroy; I have come that they may have life, and have it to the full. ” John 10:7-10

The pasture Jesus promises is the spiritual food we need in order to stop trying to satisfy it with physical food. It is much more than food actually; it is life from abundance! Ask God for this life, don’t settle for anything less!

How To Add Images To Your Web Design

Introducing imagery to your website can add more than interest and excitement. They can form the centrefold of your site, and can make all the text and all the figures, even more appealing.

Plus they are incredibly easy to add.

All you need to remember is how to use tags, and once you have grasped them, you will be well on your way.

So what is an tag? Simple. It is made of 2 parts:

SRC - this attribute tells the browser which image to display.
ALT - tells the browser what to display if it cannot show the image.

But before you go and get ahead of yourself, there are two other attributes to consider which we strongly recommend that you use: width and height.

Forget these within your web design, and the width and height of all your images will be affected, and will be translated back onto your web page.

For a start they enable the web page to render more quickly. By setting a fixed width and height the browser will then instantly be able to allocate space for that particular image and then move onto the rest of the page –whilst the image is still downloading.

How to find width and height

The easiest programme to use for this is called Netscape. This simple programme allows you to see the width and height of your image within the title. For example it will probably say ‘GIF image width × height pixels – Netscape’.

Internet Explorer on the other hand displays the height and width that are specified by the HTML, not the real size of the image you have downloaded. This can be deceptive if you’re not paying attention, but can be easily remedied.

Simply right click on the page and choose the correct properties.

The Tag

This part is even simpler.

All you need to do is enter this code:

Or if you want to use more complicated imagery, there are also GIF, JPEG and PNG images to consider.

GIF Images

These are great if the images you want to use have a small number of colours on them: generally no more than 256 unique colours per image.

GIF’s are also much easier to control. Place them side-by-side with a JPEG images, and you’ll instantly notice a difference between the complexities of their algorithms. GIF’s are much more compressed. Their only problem is when you use flat colour images and text; together they will produce very small file sizes.

Things to remember…

The type of format GIF uses makes them unsuitable for photographs or images with gradient colours. Why? Their colour limitation. GIF’s only have a select range of colours, so gradients and photographs will all end up banding together when saved in a GIF file.

Not exactly ideal if your photographs represent an important aspect of your company i.e. your product.

JPEG Images

Of all these 3 formats, JPEG’s offer the best colours and graphics when working with photographs.

Why? Well, for a start they have got millions of colours for you to choose from. And its complex algorithms enable you to create smaller graphics. Smaller than GIF’s.

The only problem with JPEG’s – a part from sacrificing some of the quality of your image as you shrink it down – is its inability to work with text, large blocks of solid colour and simple images with crisp edges. The reason? When compressing the image the text, colours or lines surrounding it may blur, causing your image to lose definition and become less sharp.

PNG Images

This format was originally designed to be a replacement for GIF’s when GIF images became subject to royalty fees.

But with this re-design came a better formatting programme. PNG graphics have a better compression rate which in turn allows you to save even smaller images than if you used GIF’s. Plus your website can benefit from alpha transparency and animation on top of reduced image sizes.

Yet despite all these improvements PNG’s are still not suitable for photographs.

Yes, it is possible to avoid the banding issue - which is the main problem of GIF’s - by using true colours, but this simply results in very large images. And to top it all, many of its special features are not well supported by Internet Explorer, which could cause browser problems at a later date.

So which one do you choose? Which one is better?

We recommend a combination of GIF’s and JPEG’s. Together you can find the right image balance that will enable you to use a variety of graphic images to keep your website interesting and fresh.

And the rest? Will just fit into place.

Puget Sound Orcas Presumed Dead

Scientists at the Center for Whale Research have been carefully tracking the population of orcas, or killer whales, in the Puget Sound, and seven of the orcas are missing and presumed to be dead. They say that this could be the biggest drop among the orcas in nearly a decade. “This is a disaster,” says Ken Balcomb, a senior scientist at the center. “The population drop is worse than the stock market.”

The group of whales that have vanished includes two young females who recently gave birth to calves, as well as one leader of the three southern resident pods, who is 98 years old. One of the young calves is also missing. Scientists say it isn’t unusual to lose older or younger whales, but losing two females in the reproductive prime of their lives is a bit concerning since they typically have a high survival rate.

One of the missing female whales, called L-67, was expected to bear two or three more calves, Hanson said. One of her previous calves, known to scientists as Luna, made headlines seven years ago when he somehow became separated from his pod and turned up off the coast of Canada’s Vancouver Island. Five years later, a killer whale was killed in that area when it was hit by a tugboat propeller, and that whale was believed to be Luna.

Hanson said that before she disappeared in September, Luna’s mother was showing signs of emaciation. It definitely showed she was not eating, but researchers did not know why. They collected samples from her a few weeks before she disappeared, and now they are conducting tests to see if they can figure out what was causing her not to eat.

Chinook salmon, which are a preferred food for these whales, were not as prolific this year as in previous years, and that may be a factor in the high number of orca deaths this year. “It was a bad salmon year and that’s not good for the whales,” Balcomb said. “Everybody considers these wonderful creatures, but we really have to pay attention to the food supply.” According to Howard Garrett, director of the Orca Network, the whales seem to be having a harder time finding the salmon and have been traveling over greater distances than usual, supposedly ranging farther for food.

The three pods that live in the inland marine waters off the coast of Washington are genetically and behaviorally different from other killer whales. They mate only among themselves, they eat salmon instead of other animals, they make sounds that researchers believe are a unique dialect, and they are particularly attracted to that region of the ocean. Over the last century, the combined population of the pods reached 140 or more, but their numbers have fallen in the last few decades, with only 83 remaining. They were listed as endangered in 2005.

Pollution and the low numbers of salmon may be the primary causes of concern for the whales, but other threats have been underwater sonar tests conducted by the Navy and stress from increased numbers of whale-watching tour boats in the area. In the late 1960s, the population dropped when dozens of orcas were captured for transport to marine parks. The whales seemed to be coming back in recent years, growing to a population of 90 just three years ago. But now the population appears to be in a decline again. A 6-year-old male among the missing is Luna’s brother, and a calf that was born in November is missing, believed to have not survived the winter.

Researchers are hopeful that the whales may appear somewhere else, as Luna did before he was killed accidentally. The populations may increase if more baby orcas are born this fall. But for now, the declining numbers are troubling as scientists keep a careful watch. “We’ve been monitoring,” Balcomb said. “They’re just gone.”

Whether you’re an adventurous cheese lover or just plain hungry, you’ll find a cheese that will satisfy your craving for great cheese.

Asiago - This cow’s milk cheese gets its name from the village of Asiago in northern Italy. There are two types of Asiago, Asiago d’allevo and Asiago pressato. Asiago d’allevo is made from partially skimmed cow’s milk and is beige in color with distinctive tiny holes running throughout the cheese. When ripe, the cheese can be soft and makes for a great table cheese, but when aged for a year or longer, it is used as a grading cheese. The flavor is rich, somewhat nutty, but mild. The milder, sweeter Asiago pressato is made from pasteurized whole milk and is aged only for a short time.

Camembert - Created in 1789 by Marie Harel, a peasant woman and said to have been christened by Napoleon himself, this cow’s milk cheese (40 to 45% fat) is world renown.
11 centimeters in diameter and 3 to 4 centimeter’s thick, this smooth creamy cheese with a soft white rind should be served at room temperature when perfectly ripe.

Gorgonzola - Named for the Italian city where it is made, this cow’s milk cheese is rich and creamy with a slightly pungent flavor. When aged over 6 months, both the flavor and the aroma become stronger… much stronger. Some people think it’s stinky, but if you like strong cheese, you will love gorgonzola. It goes great with pears.

Livarot - One of France’s oldest, a wonderful cheese named after a village in Normandy and whose nickname is the Colonel because it is bound with five strips of paper that look like a Colonel’s stripes. Livarot is made from cow’s milk but has only a 40% fat content. It is naturally white but colored orange-red with a tincture from a South American tree called the roucou. Livarot goes great with a red wine.

Manchego - Spain’s most famous cheese and most popular, is made from sheep’s milk and has a mild salty nutty flavor. It has a characteristic crosshatch pattern on it’s rind (inedible) that today comes from plastic molds, but is modeled after the traditional presses made from strands of the native grass esparto. Manchego is great to serve alone as an appetizer or with other cheeses and some cured olives. Some people grate it and serve it on vegetarian dishes.

Mascarpone - Originally created in Northern Italy nearly 400 years ago, mascarpone is a key ingredient in the famous Italian dessert Tiramisu. Made from cow’s cream, mascarpone is a buttery double to triple cream cheese with an ivory color, smooth texture and cream-like flavor. You can serve it even with coffee.

Mozzarella is a soft white cheese with a mild flavor typically made from cow’s milk. It came from southern Italy where it was originally made from buffalo milk. If you are lucky enough to find real buffalo mozzarella in your local market, try it. Although expensive, it’s like eating ice cream compared to frozen yogurt.

Pecorino Romano, one of the world’s oldest and most favorite cheeses, comes from just outside beautiful Rome. Romano’s original name was Pecorino-Romano. Romano is very important in Central and Southern Italy. Romano has a creamy white color, sharp piquant flavor and a hard granular texture. Romano can be used in many of the same menu applications as Parmesan, especially when a more pronounced cheese flavor is desired. There are several different styles of Romano cheese, all of which take their name from the city of Rome. Probably the best known is the sharp, tangy Pecorino-Romano, made with sheep’s milk. Caprino Romano is an extremely sharp goat’s milk version. Vacchino Romano is a very mild cow’s milk cheese. All Romano Cheese is made by a special method known as “rummaging curd” or draining the curd quickly after molding, then piercing the surfaces slightly before salt is applied.

There are parmesan cheeses made all over the world but there is only one Parmigiano-Reggiano. Although more expensive, this granular textured cheese whose processing method hasn’t changed in the last 700 years is usually aged for 2 years.

Roucoulons is a cow’s milk cheese from Franche-Comte, France. It’s soft-ripened cheese that is very similar to Camembert or Brie. Did you know that although real Camembert and real Brie come from completely different regions in France, they are made from the same recipe and are identical in taste?

Sarah Palin May be Poised for 2012 Run for President

Win or lose, some say, after the election next week Sarah Palin will have her sights set firmly on the presidential election in 2012. Many political experts are projecting her as the early favorite to be the Republican nominee for president in the next election.

Given the tumultuous campaign experience she is currently having, including charges from her home state of Alaska of misappropriating state funds and abusing the power of her office, that idea might seem a little far-fetched to many. But supporters of the idea point to her charisma and her ability to excite and motivate the Conservative Right, which forms the foundation of the Republican voting base.

The interesting aspect of the idea is that Palin might be well-positioned for a 2012 run, regardless of the outcome of this election. Even if McCain wins, some experts think that the 2012 campaign will focus on many of the “traditional American” values with which Palin seems to be closely aligned. And it seems unlikely that McCain would attempt a second term, given his age.

And while the media and the public may be viewing Palin as more of a hindrance to the McCain campaign, Palin supporters and some objective political observers see the situation as reversed. It is McCain who is holding down Palin in this election. Free to run her own campaign and move to the forefront of a ticket, Palin would be able to draw in even more support, perhaps grabbing some of the independent and undecided voters that Barack Obama seems to be drawing toward his camp in the current campaign.

In any event, the next four years are likely to be far more important for Sarah Palin’s political future than the next seven days. Regardless of the outcome of the November 4th election, Palin will have four years to establish herself as a leading Republican figure and could possibly be holding the Republican nomination for president the next time around.

Though only a few centimeters long, male guppies have some pretty loud fashion, having been known to sport splashes, spots and stripes in just about every color of the rainbow. Sounds like a big mess, but the ladies don’t seem to mind. In fact, it’s a large part of what drives their attraction. Unfortunately, the colorful display is also a beacon for predators, which makes a strong argument for the safety of basic black.

This amphibian gets his worthy name from his homestead in Lake Titicaca, which sits 10,000 feet above sea level in South America. As one might imagine, there’s not a lot of air up there and seeing as frogs breathe through their skin, this presents a bit of a challenge. What might the solution be? More skin! And boy do we mean more - these frog’s pants can stretch over 20 inches wide!

They’re armed with one claw that weighs up to 65 percent of their total body mass. The super sized claw is used to attract females and in this case, size does matter. The ladies have been known to peruse more than 100 mates before settling on a match. Unfortunately, the enlarged claw also proves to be quite a hindrance. It’s pretty useless and a big neon sign to predators. Seems to be a blessing and a curse too.

The male sage grouse is equipped with two yellowish air sacs underneath his feathers. He fills the sacs with air and then makes a popping sound that can be heard from up to three miles away. While that may sound like something a doctor should look at, it’s actually a cue for the females that it’s time to choose a mate. The bigger the pop, the more attractive the male… Along with this bird’s ability to sing and dance, this event has got to be part of the weirdest talent and beauty pageant ever.

With a tail measuring 8 feet wide and containing over 200 feathers, the peacock is the Christmas tree of the animal world. Here’s where the scientific part comes in: peacocks with the bluest blue eyes on their tail are deemed to be the healthiest. Of course, that also presents a con, as peacocks with too much junk on the trunk have a little trouble when it comes to flying. This presents a challenge when it comes to fleeing predators. All he can do is… run.

Porcupine

Its coat of 30,000 sharp spines may help protect the porcupine from predators, but it does nothing for its love life. In fact, the porcupine’s own life is in jeopardy by its coat as well. If porcupines are hit with a craving for leaves and small twigs, they will climb trees to get what they want. Problem is, porcupines often fall and impale themselves with their own spines.

Babirusa

You’re in trouble in the fashion world if your nickname is “pig-deer.” Native to the Indonesian island of Sulawesi, the babirusa looks strange and wild, with its canine teeth growing straight through the roof of its mouth. Not only is this unsightly to look at, but also a danger to its survival. If the teeth continue to grow, they can curve back and lodge into the babirusa’s brain. Now that’s a tragedy!

The deer has a rack of antlers, which can measure up to 7 feet wide and weigh in at 80 pounds or more. In fact, it is believed that the largest deer species ever was the Irish elk, with antlers over 12 feet wide (almost twice the length of what a moose sports today). During the mating season, male deer use their antlers to head-butt the competition. However, by doing so, they also run the risk of locking together, leaving them prone to predators or starvation.

White Bengal tiger

Their unusual coloring is caused by a mutant gene and while it’s not harmful to their health in any way, it does impact their ability to survive. White is not exactly ideal when it comes to blending in with the jungle.

For the male lion, a hairdo can never be too big or too dark. This cat’s iconic mane is his calling card for attracting the ladies. A dark color indicates a lion who is relaxed, better fed and with fewer parasites. Sounds good?

There are a lot of diseases typical for civilized parts of the world, like in Europe or America, and which have never been found in less civilized countries, where the basic diet is made up of fresh fruit and vegetables. For example in Africa the British researchers have not found, for about 30 years, a single case of prostate and colon cancer, or rupture. The only explanation the experts found in this respect was the difference in eating habits.

How do juices help us?

When we cook our food, the micro-nutrients found in the fresh products are being destroyed. If our diet is rich in organic fruits and vegetables, and we consume daily the right quantity of micro-nutrients, we will have a healthier, happier and more productive life. And we’ll reduce the risk of having all sorts of illnesses.

The human body ideally needs no less than one kilogram of fruit/vegetables for each 50 weight kilos. The problem is, it is very difficult to eat so much fruit and many fresh veggies. Also, if we eat out of the same fruit/veggie, we won’t get the necessary mix of vitamins and nutrients, and we’ll also increase the risk of becoming allergic to that very product.
